01 - 1 ripe pineapple

# Directions:
01 - Cut the pineapple lengthwise into two halves, keeping the leaves attached to one half for presentation.
02 - Using a paring knife, score around the edge of one pineapple half leaving a 1/2 inch border, then carefully cut the flesh into cubes without piercing the skin and scoop out with a spoon.
03 - Discard the pineapple core from the removed flesh cubes.
04 - In a large bowl, combine the pineapple cubes with kiwi slices, diced mango, strawberries, halved grapes, and blueberries.
05 - In a small bowl, whisk together lime juice and honey or maple syrup until blended.
06 - Drizzle the dressing over the fruit mixture and toss gently to combine evenly.
07 - Spoon the dressed fruit salad back into the hollowed pineapple half, mound attractively, garnish with fresh mint leaves and serve immediately.
